Fresh produce production cycle

The production of fresh products begins with the preparation of the ingredients. The operator follows the product recipe, weighing the individual ingredients and blending them
in the blender.

Once the product is ready, a series of chemical parameter checks are carried out in our laboratories to guarantee its safety.

Next, the pesto is sent to the packaging stage using an automatic dosing machine that both doses the product and heat-seals the jar with a film that also acts as a label. A second check is then carried out: the finished jar passes through a metal detector and is weighed. If either of these measurements fails, the jar is automatically ejected. Once the jars have complied with safety standards, they are boxed and palletized.

While awaiting shipment, the products are stored in a special cell used for the refrigerated conservation of finished products.

The production of preserved products begins with the preparation of the ingredients. The operator follows the product recipe, weighing the individual ingredients and blending them in the blender.

Once the product is ready, a series of chemical parameter checks are performed in our laboratories to ensure its safety. An operator loads the empty jars at the start of the production line, which are automatically inverted and passed under a jet of compressed air. The pesto is poured into the dosing machine, which fills the empty jars with the correct amount. The jars then pass under a metal detector, which checks the jars and, if found, rejects them.

Now it's the capper's turn to seal the filled jars, creating a vacuum inside them to ensure optimal preservation. The seal and internal pressure are then checked.

The next stage is drying and automatic weight control. As with the metal detector, non-compliant jars are automatically rejected. The jars then exit the production line, are labeled, and the best-before date is applied. The product is then ready to be wrapped, palletized, and stored awaiting shipment.

The operation is very simple.

We specialize in the production of Pesto alla Genovese and other traditional Ligurian sauces, and a few years ago we launched a Private Label service, leveraging all our expertise.

Companies that choose to rely on this service can choose from a variety of recipes based on their needs: Pesto alla Genovese, Garlic-Free Pesto, Walnut Sauce, and many others. The selection is quite extensive, and once the product is identified, you can move on to the next step.

The customer can choose between two packaging options and the chosen packaging will subsequently be labeled with a private label.

Even our private label products are manufactured in compliance with quality standards, and the production processes are monitored and certified.
